A cheesecake may seem simple enough, but it can actually be one of the hardest pastries to whip up for someone with no experience. And no matter how closely you follow cheesecake recipes, your cake could still fall apart if you don’t know the secret steps. Here are some less-popular, but very effective, cheesecake recipe tips to make your cheesecake a big hit.

Use only the best ingredients. Your cheesecake is just as good as the eggs you use to make it, so be sure to buy only the freshest. You should also be very careful about the cheese you choose – unless you’re on a strict diet, ditch the fat-free cream version and go for the real cream cheese. No matter what health buffs say, the real pastereurized kind still tastes better.

Be sure the ingredients are at room temperature, especially the cream cheese and the eggs. Otherwise, no matter how hard you try, your cheesecake will never be smooth. How do you bake when your cream cheese is frozen? Just microwave it on high for a little less than a minute or until it softens up. If you overdo it and the cream cheese melts, refrigerate it until it is just the right temperature.

Don’t bake the fruit. This tip seems simple enough, and yet many people forget about it. Just add in the fruits as toppings later so they can retain their freshness, flavor, and color.

Don’t peek! Opening the oven door when the cheesecake is not yet baked can ruin it. Your cheesecake can have cracks, or worse, may even fall apart. So restrain yourself until it’s done.

Wait thirty minutes before removing the cheesecake from the oven. After baking, just turn off the oven and let your cheesecake sit for another half hour. This waiting time will make it perfectly puffed and moist.

Rising food prices have sent many of us back to the kitchen to save money. And while there are many benefits of a home cooked meal, preparing dinner from scratch still takes valuable time from our busy schedules. But it can be easy to prepare simple entrees at home, saving you both time and money. So move beyond burgers and fries and fix one of these dishes tonight! All are easy to prepare and ready in about 30 minutes.

Soups: Soup is one of the easiest, most wholesome, well-received family meals. Unfortunately though, most canned soup offerings are high in salt and chemical preservatives and lack any distinguishable flavor. You can do better. Start with either low sodium broth or a combination of water and tomato juice. Don’t worry about exact measurements – you can always add more water later if necessary. To the soup pot add; chopped or instant minced onion, cut up cooked meat or drained, canned beans, your favorite frozen vegetables, a handful of rice, barley or pasta, and dried herbs like basil, thyme, rosemary, bay and/or marjoram for flavor. Simmer until heated through and the rice or pasta is cooked, 20-30 minutes. Just before serving add a splash of balsamic or red wine vinegar and season with freshly ground black pepper. To make a soup extra special, top with dumplings, serve over a slice of toasted French bread or serve in a purchased bread bowl. Cost: Deli soup $2.59, Homemade $1 per serving.

Stir Fries: Stir-fries are a great way to use up odds and ends of leftovers. Heat olive or peanut oil in a skillet. Quickly cook small pieces of chicken, beef or shrimp and add cut up vegetables like carrots, zucchini, broccoli, bell pepper and green beans. Make a simple but flavorful sauce by mixing together broth or water and orange or pineapple juice. Add a dash of cayenne pepper, your favorite herbs and a little cornstarch. Stir the mixture until the sauce thickens, adding more water if necessary. Serve over rice or noodles. Cost: Lunch counter rice bowl: $5.49, Homemade $2.50.

Casseroles: Mom was right. Casseroles are easy to prepare and money saving too! Start with cooked rice, pasta or millet. Use brown rice instead of white rice or pasta shells or ziti in place of spaghetti noodles for variety. Stir in cooked, chopped meat and your favorite vegetables. Peas, carrots and corn are especially good choices in casseroles as they maintain their flavor even when baked at high temperatures. Mix everything together with a thickened broth or a can of low-fat, low-sodium cream of celery soup. Add herbs for flavor. Top the casserole with dried bread or cracker crumbs and grated cheese and bake until hot and bubbly. Serve with a tart relish, chutney or dill pickles on the side for a complete meal. Cost: Food court baked ziti $3.49, Homemade $1.

Sandwiches: Traditionally considered lunch food, sandwiches are now a dinnertime favorite too. Keep whole-wheat sandwich rolls or pita bread in the cupboard to make your own Hoagies, Grinders or Italian sandwiches. Start with a flavorful mustard (Walla Walla Sweet Onion by AJ’s Edible Arts and Seadog Beer Mustard by Raye’s Mustards are good choices) and stuff with deli meat and cheese, prepared hummus, chicken, tuna or egg salad. Add slices of bell pepper, tomato, spinach, avocado, olives and pickles and top with a splash of olive oil and red wine vinegar. For an even heartier sandwich, add marinated artichoke hearts, pineapple chunks or grilled eggplant slices. Cost: Sandwich shop grinder $6. Homemade: $2.

Stick with simple meals and dinner will be ready in no time. Better yet, you’ll save money and have a healthier family too!

If you are used to baking with sugar, it may take a little getting used to stocking your pantry for a low-sugar or sugar-free lifestyle. Once you realize that your sweet life is not over just because you are cutting back on sugar, you will be just fine. Here are some tips to help you stock a pantry with baking supplies needed to make sugar-free desserts.

Sweetening the Pot without Sugar

The most obvious ingredient for baking sugar-free desserts is a substitute for sugar. There are a number of artificial sweeteners that are widely available, including aspartame (Equal), acesulfame-k (Sweet One), saccharin (Sweet ‘n’ Low) and sucralose (Splenda). They can be a little tricky to use in baking because they have different properties than sugar, but there are many sugar-free dessert recipes using each of them. Because each of them differs from the others in the way they react to heat and the amount of sweetening power they have, it is also important to use the artificial sweetener that is called for in the recipe. Aspartame, for instance, loses its sweetness in when it is subjected to high heat for long periods of time as it would be if you use it in cakes or cookies that are baked in the oven. Splenda, on the other hand, is stable in heat and can be used in baked recipes, but may need additional liquid.

In addition to artificial sweeteners, there are natural sweeteners that you can use for no-sugar-added desserts. These include long-established favorites such as honey, Stevia, molasses and corn syrup, but are not limited to the obvious sweeteners. Fruit juices can add sweetness and enhance flavors when used in place of water in recipes. Apple and grape juice are the sweetest, but not the only fruit juices that you can use to sweeten desserts. Try sweetening with pineapple or orange juice for a bit of tang, or pear juice for a light sweetness.

Keep a package or two of sugar free gelatin and pudding in the pantry as well. They make moist additions to cake and cookies, adding both flavor and color. Do not forget unsweetened chocolate squares, cocoa powder, and flavored extracts – the staples are vanilla, almond, rum, butter and peppermint.

Adding a Little Spice to Dessert

When your senses are not overcome with sugar, you will find that a little spiciness goes a long way. Cinnamon, nutmeg, allspice and ginger are the so-called “sweet spices”. They will bring out the sweetness in smaller amounts of sugar or other sweeteners and are especially flavorful when used with fruit juice or puree.

Savory spices can also add an unexpected flair to dessert. Do not be afraid to experiment a little. Chili adds an unexpected bite to strawberries, for instance, and herbs like peppermint, lavender and rosemary do a wonderful job of enhancing the flavor of ice cream and fruit sorbets.

Sugar Does More than Make Things Sweet

Keep in mind that sugar provides more than just sweetness in a lot of recipes. It can be the reason that cakes and cookies brown when they bake, aid rising and provide moisture and texture. That is why a favorite pantry staple for sugar-free cooking is baby food – pureed bananas, pears, plums or applesauce – just about any kind of baby food fruit puree will do. It will add both sweetening and moisture to cakes, muffins, breads and cupcakes along with extra nutrition.

Flaked coconut is another pantry staple that will do double duty in your sugar-free pantry. It adds sweetness and flavor to cakes and cookies, and browns nicely when sprinkled on baked goods and run under the broiler.

A jar or two of sugar free fruit spread are handy to keep in the pantry. They can be stirred into plain yogurt for a quick snack or easy dessert, or spread on pound cake instead of frosting to add flavor and extra sweetness.

Peanut butter is another staple that should be in every sugar-free pantry. It will add flavor to muffins, cookies or cakes, as well as substituting for part of the fat. Thinned with a few tablespoons of milk and stirred over low heat, it makes a quick dessert topping or sauce, and pairs very well with chocolate or bananas. Be sure to read the label carefully, since a lot of peanut butters have a surprising amount of sugar in them.

The more you cook without sugar, the easier it will be to create tasty, healthy desserts. As your taste buds – and those of your family – adjust to less sugar, you will find that other flavors come more and more to the fore. It will not be long at all before you find that you prefer desserts that are fresher and lower in sugar because they naturally taste better.

There is a vast assortment of fish in the market to suit your palate. The most difficult part of the selection process is how you will handle the challenge of preparation. When you have decided on a grilling fish recipe, here are three helpful hints to start you off and make certain that you will produce the perfect outcome:

Selection

• Fresh fish should have a mild ocean fresh scent.
• If there is any other odor besides that, do not make a purchase.
• Do not buy frozen fish if you see evidence of freezer burn or ice crystals.
• The eyes of a fresh fish should be clear and shiny, the gills should be pink or red, and the scales should also be shiny.

Storage

• Seafood should be used within 24-36 hours of purchase.
• Seafood should be the last item you put in your cart before checking out at the market.
• Defrosted seafood should be used within 36 hours.
• Frozen seafood stored at home should be used within 6 months.

Handling

• Never defrost seafood on the counter.
• Don’t marinade seafood in citrus liquids for more than 25 minutes or it will begin to cook or wither.
• Always wash your hands with hot, soapy water for 20 seconds before and after preparation.
• Marinade that has been used for seafood must be heated before serving with cooked seafood.

The Best Breeds for Grilling Recipes

Fish is a fabulous alternative to an often mundane steak or chop so, when you choose a certain fillet or steak to grill do you have in mind the type of grilled fish recipe that will work splendidly for the fish you have selected.

There are hundreds of species of fish that work well for grilling but, I will share with you the most recognizable:

• Catfish
• Grouper
• haddock
• Halibut
• Lobster
• Macheral
• Maui Maui
• Octopus
• Salmon
• Scallops
• Sea bass
• Shark
• Shrimp
• Snapper
• Swordfish
• Tuna
• Tilapia
• Trout

When it comes to grilled fish recipes, always keep it simple. To many herbs, spices, and marinades can take away the natural flavor and delicacy of the fish.

When you start preparing your fish for grilling, the best coating for a fillet or steak is an oil based marinade that will retain the flavor and moisture. Remember to baste the fish frequently and turn fish halfway through the cooking time if the fish is over 1/2 inch think.

The easiest way to grill fish is with a grilling basket. Hunters and campers often use this method to keep the fish intact while it is grilling over the open pit. The mesh basket allows for easy rotation without the fish sticking or breaking apart.

Always leave skin on fish steak while completing a grilling fish recipe so it retains it’s flavor but, most of all it will stay in tact while being grilled.

The Time is Right

It’s quite easy to tell when grilled fish is done by the way it looks. The fish will turn opaque and it will flake easily with a fork when you test the thickest part of the fish.

Follow these simple and easy to do guidelines to get the best out of your seafood selections every time.

You don’t have to spend hours in the kitchen to have a nice sit-down family meal. Meals do not have to be complicated to be healthy and worthy of family togetherness and you certainly do not have to “eat from a box” to make meals convenient.

Microwave meals and oven-ready foods may be simple and tasty but most of them are filled with different types of preservatives, saturated fats, sodium and sugars. Even those that are low in fat and sodium would have been preserved with chemicals to prolong their shelf lives. While these are convenient to use when you are in a time crunch, they are not the only ways to prepare a quick at-home meal your family will love.

You can buy some products prepackaged. Lettuce, shredded cabbage, carrots and radishes all come in bags. There are varieties of salads you can buy in bags in the produce section of your local grocery store. If you like other vegetables on your salad, it does not take a lot of time to chop and add them. Canned vegetables and fruits to which salt and sugar have not been added are easy ways of giving your family the fruits and vegetables it needs. Frozen vegetables are not unhealthy, either, though if you want the best, you should buy your veggies fresh and steam them rather than boil them.

Healthy breads, cereals and pastas are all quick and simple ways to add complex carbohydrates to your meals. Canned tuna and ground poultry meats make great substitutes for red meats in many different sauces. Turkey burgers that are seasoned well make fast and scrumptious suppers. If you have even half an hour for meal preparation, these can be made along with a salad and some fresh fruit in less time than you have planned.

One-dish meals such as a pot roast with potatoes and carrots are easy to make in the oven but will be even easier and perhaps tastier when made in a crock pot. Put the vegetables in the bottom of your crock pot and place the roast on top. Season, cover and let cook for several hours. Put it together in the morning before leaving to work and when come home in the evening you have a healthy and delicious dinner waiting for you. What could be simpler than that? Well, pot roast is not your only choice and there are other recipes that are just as easy.

Make family meals easy and enjoy the time you have together instead of eating on the run. Easy family meals really can be healthy!

Many people don’t have a lot of time to cook. They have a lot of other things to do. Between work and school and other activities they’re lucky if they have time to stop at a fast food joint much less prepare quality meals at home. Quick, healthy, inexpensive meals aren’t easy to plan, that’s the problem. It’s not that hard, folks. A seven day menu isn’t all that hard to plan for people who know where to look. Here are a few good dinner ideas for delicious meals the whole family can enjoy.

Fairs and street vendors often have corn dogs, an American favorite. It’s delicious and easy, even though not exactly healthy. Coat the hot dogs with batter made of flour, corn meal, milk, salt, sugar and baking powder, then fry them until golden. You an even add a corn dog stick to make it feel authentic.

In colonial times, dinner was an afternoon meal, followed by a later light meal called supper. As time went by this changed based on social class and schedule. Physical laborers needed an afternoon dinner to keep up their strength throughout the grueling day. But now dinner has become the sole evening meal, the anchor to the family and transition from the work of the day to winding down at night. But supper and dinner have become intertwined, often interchanged in meaning this big meal. The late meal can be light especially for people who are weight conscious. Go the traditional dinner route with a light soup or roast chicken salad.

Busy schedules and crock pots were made for each other. Set it, forget it, then return home to a well cooked meal. The whole meal can cook without supervision. Add some meat and some potatoes cut into quarters for a terrific pot roast. Pick up some salad and a fresh loaf of bread at the store. You can also let the bread slide if you’re worried about the waist line.

Excellent home cooking isn’t hard – try pork chops, or steaks on the grill. Search for the term dinner ideas on a search engine like Google. The Internet has more than you can handle.
